Harvest Muffins . . . or Cake

This morning I tried out my fancy little oven again and made this tasty little cake. It was supposed to be muffins, but I couldn't find a muffin tin so I just poured it in a small cake pan. When I opened up the fridge to get 3 eggs I saw that we only had 1 egg. Opps! I put on my shoes and went to see if any of the little shops near us were open, but none of them were, so I walked over to my neighbor's house. I knocked gently and called, "Permisi". She came out and I told her I was making muffins, but didn't have enough eggs and asked if I could borrow "dua telur" (2 eggs) She was glad that I asked and handed me 2 eggs . . . of course she got 2 eggs back along with some of the cake.


Harvest Muffins
Combine:
1 1/2 cups flour (I used rice flour because Kathryn is allergic to wheat flour)
1/2 cup oatmeal
1 cup sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
Add in:
2 cups grated carrots
1 grated apple
1/2 cup raisins
1/2 cup nuts (almonds are my favorite in this)
1/2 cup coconut
3 eggs
1/3 cup milk
1 T oil
2 tsp vanilla
Grease a muffin tin and fill 2/3 of the way full.
Bake for 20-25 min at 350
