I thought for my first post I would give you a delicious recipe from Asia Pacific, it is one of my favorites!!
Nasi Kuning
Soak for 1 hr in cold water:
1 ½ cups rice
Drain and wash
Saute rice for 2 min in 2 T olive oil
Add and stir fry for 2 min:
1 tsp turmeric
1 tsp coriander
½ tsp cumin
Add:
1 can coconut milk
1 cinnamon stick
2 whole cloves (clove spice)
½ tsp salt
1 bay leaf
Simmer for 10 min, until liquid is absorbed
Steam for 10 min (might take longer)
Serve with steamed vegetables, grilled chicken, steak . . . or just enjoy by itself.
